Cauliflower Stir Fry

A couple of nights ago I was feeling stir fry for dinner. But traditional stir fry is carb-loaded with rice, so as a low-carb alternative I tried a Cauliflower Stir Fry recipe I found on Family Fresh Meals. I followed the recipe except used an oil spray, egg whites, and added water chestnuts. I didn't have any reduced-sodium soy sauce, which is why the sodium of the meal is a bit high, but other than that the meal is very healthy!

The recipe makes four large servings. Feel free to customize adding in meats/other protein sources and vegetables.

Hello and Welcome!

I am a Civil Engineering Undergrad student at the Georgia Institute of Technology. But don’t let my engineering title fool you, I (like many of my fellow class mates at Tech) have a lot more to offer than above-average math and science skills : ). I have a passion for living a healthy lifestyle and so that’s what most of this blog is about. I will also include snap shots of my life in other random areas.
I love to cook and bake so expect many posts about recipes. I have an odd diet; I am vegetarian and moderately lactose intolerant, therefore, my recipes will always be meat free and for the most part, dairy free. I also love to workout. I’m a big runner, but after a knee injury while training for the Disney marathon in January 2013, I am exploring other cardio workouts (I love me a good spin class!) and experimenting with lots of work out videos. There defiantly will be some work-out video reviewing on here!
A hobby of mine is also thrift-shopping. I love finding treasures at wonderful values. Therefore, you may find the occasional post about a recent thrift adventure.
And reading! I love to read and now that I have this wonderful 3-month break from classes I plan on doing much reading. I just finished Gone Girl by Gillian Flynn.
Lately, like much of the U.S. population, I have been getting into Pinterest, so DIY projects could appear, as well. Plus, I am in a sorority so owning a craft box is not even a question.
